No crust

I tried to cook my steak according to YouTubers and they said that I need to create a really nice crust, but they said that I need to heat my pan to really high and then I put my steak down and the crust will form. But after putting my steak down on the pan on high heat (when I splash water in the pan little balls of water form) and I put it down for one minute, after I flip it not only is there no crust but all the seasonings fell off. I made sure to put my steak out in room temp before, and I seasoned thoroughly. What’s going on?
